Andalusian Fried Fish
Mixed fried fish dusted in chickpea flour, crisp and not greasy. With lemon and a cold beer.

Ingredients
Serves 4
- fresh anchovy11 oz
- squid11 oz
- fish for frying11 oz
- frying flour7 oz
- olive oil3.25 cup
- lemon1
- salt1 tsp
Method

Clean the anchovies, cut the squid into rings and the frying fish into pieces. Dry everything very well and salt.

Dredge the fish in the frying flour and shake in a strainer to remove the excess.

Heat the olive oil to 180 °C (355 °F) in a deep skillet.

Fry in small batches, 1-2 minutes, until golden and crisp. Don't overfill the pan or the oil cools down.

Drain on paper towels and serve immediately with the lemon in wedges.
