Beef in Tomato Sauce

Ingredients
Serves 4
- stew beef2 lb
- crushed tomato1.75 lb
- onion1
- green bell pepper1
- garlic clove3
- white wine3.5 fl oz
- bay leaf1
- sugar1 tsp
- olive oil4 tbsp
- salt1 tsp
- black pepper1 pinch
Method

Cut the stewing beef into chunks and season with salt and black pepper.

Heat the olive oil in a casserole and brown the beef over high heat in batches. Set aside.

In the same oil, sauté the finely chopped onion, green pepper and garlic over medium heat for 10 minutes.

Return the beef and pour in the white wine. Let the alcohol cook off for 2 to 3 minutes.

Add the crushed tomatoes, the bay leaf and the sugar to balance the acidity. Stir well.

Cover and simmer gently for 1 hour 15 minutes, stirring occasionally and adding a little water if the sauce gets too thick.

When the beef is tender, remove the bay leaf, adjust the salt and serve with bread or fries.
