Homemade Three-Delight Fried Rice
Homemade fried rice with day-old rice, ham, egg, peas and carrot. Better than takeout.

Ingredients
Serves 4
- rice11 oz
- cooked ham5.25 oz
- egg3
- pea5.25 oz
- carrot1
- peeled shrimp5.25 oz
- soy sauce3 tbsp
- vegetable oil4 tbsp
- salt1 pinch
Method

Cook the rice the day before (or at least a few hours earlier) and keep it in the fridge so it stays loose.

Beat the egg, set it in a thin omelet with 1 tablespoon of sunflower oil and cut into strips.

Stir-fry in the rest of the oil over high heat the diced carrot 3 minutes and the peas 2 minutes.

Add the peeled shrimp and diced cooked ham and stir-fry 1 minute.

Add the cold rice and soy sauce and stir-fry 3-4 minutes. Add the omelet and taste before salting.
