Mongetes amb Botifarra (Beans with Catalan Sausage)

Griddled butifarra sausage served with white beans sautéed with garlic and parsley in its fat. A simple, quick and very tasty Catalan classic.

Ingredients

Serves 4

  • butifarra sausage4
  • bean1.75 lb
  • garlic clove3
  • parsley2 tbsp
  • olive oil3 tbsp
  • salt1 pinch

Method

  1. 1

    Drain the jarred cooked beans, rinse with water and let them drain well.

  2. 2

    Prick the butifarra with a fork in several places so it doesn't burst.

  3. 3

    Heat 1 tablespoon of olive oil in a large skillet and cook the butifarra over medium heat about 12-15 minutes, turning, until golden and cooked through. Keep it warm.

    Peel and slice the garlic clove and chop the parsley.

    In the same skillet, with the butifarra fat, add the rest of the olive oil and brown the garlic over low heat without burning.

    Add the beans, turn up the heat and sauté 4-5 minutes, shaking the skillet so they brown a bit without falling apart. Season with salt.

    Sprinkle with parsley and serve the beans with the butifarra on top.
