Mussels Marinara
Mussels steamed open and bathed in a marinara sauce of onion, tomato and wine, for dipping bread endlessly.

Ingredients
Serves 4
- mussel3.25 lb
- onion1
- garlic clove2
- crushed tomato7 oz
- white wine0.75 cup
- flour1 tbsp
- sweet paprika1 tsp
- bay leaf1
- parsley1 tbsp
- olive oil3 tbsp
Method

Clean the mussels by removing the beards and scraping the shell.

Steam them open in a covered pot with the bay leaf and a splash of water, 4-5 minutes. Discard the empty shell and strain the broth.

Sweat the chopped onion and garlic in the olive oil for 8 minutes.

Add the flour and sweet paprika, stir and pour in the white wine and a glass of the mussel broth.

Add the crushed tomatoes and cook 5 minutes. Add the mussels, mix well and sprinkle with the parsley.
