Chickpeas with Squash and Paprika
Chickpeas stewed with squash, which falls apart and gives an orange, sweet sauce with La Vera paprika.

Serves 4
- cooked chickpeas1.25 lb
- winter squash1 lb
- onion1
- garlic clove2
- red bell pepper1
- sweet paprika2 tsp
- cumin1 tsp
- vegetable broth2.5 cup
- spinach3.5 oz
- olive oil3 tbsp
- salt1 tsp
Method

Peel the squash and cut it into 2 cm dice.

Sauté the chopped onion, red pepper and garlic in the olive oil for 10 minutes.

Take off the heat, add the La Vera paprika and cumin and stir.

Add the squash and vegetable stock and cook 15 minutes, until the squash is soft.

Add the cooked chickpeas and spinach, salt and cook 5 minutes. Mash some squash chunks to thicken the sauce.
