Fried Chickpeas with Chorizo

Ingredients
Serves 4
- chickpea1.75 lb
- chorizo5.25 oz
- onion1
- garlic clove3
- sweet paprika1 tsp
- parsley1 tbsp
- olive oil3 tbsp
- salt1 pinch
Method

Drain the cooked chickpeas, rinse them under the tap and pat dry with paper towels so they brown better.

Cut the chorizo into thin slices or dice, slice the onion and slice the garlic.

Heat the olive oil in a large skillet and sauté the chorizo 3 minutes over medium heat to release its fat. Remove and set aside.

In the same fat, sweat the onion 5 minutes and add the sliced garlic, cooking 1 more minute without burning.

Turn up the heat, add the chickpeas and sauté 5-6 minutes, stirring occasionally, until golden.

Return the chorizo, take the skillet off the heat and sprinkle with the sweet paprika, stirring well.

Adjust the salt, sprinkle with chopped parsley and serve immediately.
