Lentil Burgers
Lentil burgers with carrot and spices, golden outside and tender inside. Freeze raw and they come out perfect.

Ingredients
Serves 4
- cooked lentils14 oz
- carrot1
- onion1
- garlic clove1
- egg1
- breadcrumbs2 oz
- cumin1 tsp
- sweet paprika1 tsp
- parsley1 tbsp
- olive oil3 tbsp
- salt1 tsp
Method

Drain the cooked lentils very well and pat them dry with paper towels.

Chop the onion and garlic, grate the carrot and sauté it all in 1 tablespoon of oil for 8 minutes.

Blend half the lentils with the egg to a paste; mix with the rest of the lentils, the sofrito, breadcrumbs, cumin, sweet paprika, chopped parsley and salt.

Rest the mixture 10 minutes in the fridge and shape into 8 burgers.

Brown them in a skillet with the remaining olive oil, 4 minutes per side, over medium heat.
