Squid in Its Ink
Tender squid in a black sauce of its own ink with onion and tomato. Perfect with white rice.

Ingredients
Serves 4
- squid2.25 lb
- squid ink4
- onion2
- green bell pepper1
- garlic clove2
- crushed tomato7 oz
- white wine3.5 fl oz
- slice of bread1
- fish stock0.75 cup
- olive oil4 tbsp
- salt1 tsp
Method

Clean the squid, cut into rings and chop the tentacles.

Sweat the chopped onion, green pepper and garlic in the olive oil for 15 minutes.

Add the crushed tomatoes and the bread slice in pieces and cook 5 minutes.

Pour in the white wine and the fish stock with the squid ink dissolved, cook 5 minutes and blend the sauce.

Add the squid to the sauce, salt and simmer over low heat 30 minutes, until tender.
