Homemade Olive Oil Tortas
Thin, crisp olive oil tortas with anise and sugar, Seville style. Made for dunking in coffee.

Ingredients
Serves 8
- flour11 oz
- olive oil3.5 fl oz
- fresh yeast0.25 oz
- aniseed1 tbsp
- sugar2 oz
- salt1 pinch
Method

Heat the olive oil with the aniseed 1 minute and let cool to warm.

Mix the flour with the salt, the fresh yeast dissolved in 120 ml of warm water and the flavored oil. Knead and rest 1 hour.

Preheat the oven to 200 °C (400 °F). Divide the dough into small balls and roll them out very thin.

Sprinkle with the sugar and bake 12-15 minutes, until golden and crisp.
