Onion Tuna (Atún Encebollado)
Fresh tuna stewed with lots of softened onion and a touch of wine. A recipe from Cádiz that gains from resting.

Ingredients
Serves 4
- fresh tuna1.5 lb
- onion4
- garlic clove3
- bay leaf2
- white wine0.75 cup
- sweet paprika1 tsp
- olive oil5 tbsp
- salt1 tsp
- black pepper1 pinch
Method

Cut the fresh tuna into large chunks and season with salt and pepper.

Sear the tuna in a casserole with 2 tablespoons of olive oil, 1 minute per side, and set aside.

In the same casserole, gently sweat the sliced onion and garlic with the remaining oil and the bay leaf for 25 minutes.

Add the sweet paprika, stir and pour in the white wine. Reduce for 5 minutes.

Add the tuna and cook 5 minutes over low heat, covered, without letting it dry out.
