- flaked desalted salt cod8.75 oz
- milk3.25 cup
- flour3.5 oz
- butter1.75 oz
- onion1
- egg2
- breadcrumbs5.25 oz
- nutmeg1 pinch
- olive oil3 tbsp
- vegetable oil3.25 cup
Method

Sweat the finely chopped onion in the olive oil and butter for 10 minutes.

Add the flaked desalted cod and sauté 2 minutes.

Add the flour and cook 2 minutes stirring.

Pour in the hot milk gradually, stirring constantly, and cook 15 minutes, until the dough pulls away from the sides. Add the nutmeg.

Spread the dough in a dish, cover with plastic wrap touching the surface and chill at least 4 hours.

Shape the croquettes, dip them in the beaten egg and breadcrumbs and fry in the sunflower oil at 180 °C (355 °F) until golden.
