Hake Meatballs in Sauce

- hake1.25 lb
- egg1
- breadcrumbs2 oz
- garlic clove3
- parsley2 tbsp
- flour1.75 oz
- onion1
- white wine3.5 fl oz
- fish stock1.75 cup
- pea5.25 oz
- olive oil5 tbsp
- salt1 tsp
Method

Chop the skinless hake and mix with the egg, breadcrumbs, 1 minced garlic clove, half the parsley and the salt.

Shape the meatballs, dredge in flour and brown in the olive oil. Set aside.

In the same casserole, sweat the chopped onion and the rest of the garlic for 10 minutes.

Add 1 tablespoon of the flour, pour in the white wine and then the fish stock, and cook 5 minutes.

Add the meatballs and peas and simmer 10 minutes over low heat. Sprinkle with the rest of the parsley.
