Salt-Baked Sea Bream
Whole sea bream covered in coarse salt and baked: it comes out super juicy and not overly salted. Impressive and not difficult.

- coarse salt4.5 lb
- egg white2
- lemon1
- olive oil4 tbsp
Method

Preheat the oven to 200 °C (400 °F). Ask the fishmonger to clean the bream but leave the scales on.

Mix the coarse salt with the egg white and a little water until it has the texture of wet sand.

Make a bed of salt on a tray, place the bream with a lemon slice inside and cover it completely with the rest of the salt, pressing down.

Bake 25 minutes (about 20 minutes per kilo of fish).

Break the crust with the handle of a knife, remove the skin and serve the fillets with the olive oil.
