Baked Pork Ribs with Potatoes
Marinated pork ribs slowly roasted over thinly sliced potatoes. Tender, with the potato soaked in its juices.

- potato4
- onion1
- garlic clove4
- sweet paprika1 tbsp
- oregano1 tsp
- white wine0.75 cup
- olive oil5 tbsp
- salt2 tsp
Method

Crush the garlic with the sweet paprika, oregano, salt and 3 tablespoons of olive oil and rub over the pork ribs.

Preheat the oven to 180 °C (350 °F). Slice the potato and onion into strips and place in the tray with the remaining oil and salt.

Put the ribs on top, pour in the white wine and cover with aluminum foil.

Bake 50 minutes covered.

Uncover, raise to 210 °C (410 °F) and bake 25-30 more minutes, until the ribs are browned.
