Beef and Vegetable Stir-Fry
Tender strips of beef stir-fried over high heat with peppers, onion and zucchini, with a touch of soy. A quick, colorful, balanced dinner.

Ingredients
Serves 4
- beef1 lb
- red bell pepper1
- green bell pepper1
- onion1
- zucchini1
- garlic clove2
- soy sauce3 tbsp
- olive oil3 tbsp
- salt1 pinch
- black pepper1 pinch
Method

Cut the beef into thin strips against the grain and season with salt and black pepper.

Wash and cut the red pepper, green pepper and zucchini into strips; slice the onion and garlic.

Heat 2 tablespoons of olive oil in a large skillet or wok over high heat and stir-fry the beef in two batches, 1-2 minutes each, until browned outside. Set aside on a plate.

In the same skillet, add the rest of the olive oil, the garlic and onion and stir-fry 2 minutes.

Add the peppers and stir-fry 3 minutes over high heat, stirring constantly.

Add the zucchini and stir-fry 2 more minutes: the vegetables should be tender but still slightly crisp.

Return the beef to the pan, splash in the soy sauce and stir-fry 1 minute so everything is coated. Serve immediately.
