Chicken and Vegetable Stir-Fry

Ingredients
Serves 4
- chicken breast1.25 lb
- zucchini1
- red bell pepper1
- green bell pepper1
- onion1
- garlic clove2
- soy sauce3 tbsp
- black pepper1 pinch
- olive oil3 tbsp
- salt1 pinch
Method

Cut the chicken breast into thin strips and season lightly (little salt, the soy sauce already salts).

Slice the onion, cut the red and green peppers into strips and the zucchini into sticks. Mince the garlic.

Heat 2 tablespoons of olive oil in a wok or large skillet over high heat and stir-fry the chicken 4-5 minutes until golden. Remove and set aside.

Add the rest of the oil and stir-fry the onion and peppers 3 minutes, stirring constantly.

Add the zucchini and garlic and stir-fry 2-3 more minutes; the vegetables should be tender but slightly crisp.

Return the chicken to the pan, add the soy sauce and stir-fry everything together for 1 minute so it's coated. Serve immediately.
