Chicken in Cider
Asturian stew with natural cider and apple that leaves a mild sauce, somewhere between sweet and tart, made for dipping bread.

Ingredients
Serves 4
- cut-up chicken2.75 lb
- natural cider2 cup
- apple2
- onion2
- garlic clove2
- bay leaf1
- olive oil4 tbsp
- salt1 pinch
- black pepper1 pinch
Method

Season the cut-up chicken and brown it well in a casserole with olive oil. Remove and set aside.

In the same oil, sweat the sliced onion and minced garlic over low heat for 10 minutes.

Peel and core the apple and cut it into wedges. Add it to the pot and cook 3 minutes.

Return the chicken, add the bay leaf and pour in the natural cider.

Bring to a boil, lower the heat, cover and cook for 30 minutes.

Uncover and reduce the sauce for another 5-10 minutes. For a smoother sauce, blend part of the onion and apple and return it to the pot.

Adjust the salt and serve hot.
