Grilled Sardines

Ingredients
Serves 4
- sardine2.25 lb
- coarse salt2 tbsp
- lemon1
- garlic clove2
- parsley2 tbsp
- olive oil4 tbsp
Method

Clean the sardines: remove scales and guts and dry well. If small, you can leave them whole.

Crush the garlic with the parsley and mix with the olive oil.

Heat a griddle or grill very hot and sprinkle it with the coarse salt.

Grill the sardines 3-4 minutes per side, until the skin is toasted.

Serve with the garlic and parsley oil on top and the lemon in wedges.
