Orange Chicken
Oven-roasted chicken thighs bathed in a glossy sauce of orange juice, honey and garlic. Sweet, juicy and with golden skin.

Ingredients

- chicken thigh2.75 lb
- orange4
- honey3 tbsp
- onion1
- garlic clove3
- thyme1 tsp
- cornstarch1 tsp
- olive oil2 tbsp
- salt1 tsp
- black pepper1 pinch
Method

Preheat the oven to 200 ºC (400 °F). Season the chicken thighs with salt and black pepper.

Cut the onion into thick slices and place in the bottom of a baking dish with the olive oil. Put the thighs on top, skin side up.

Juice three oranges and mix the juice with the honey, minced garlic and thyme. Slice the fourth orange.

Pour the orange juice mixture over the chicken and scatter the orange slices around.

Bake about 45 minutes, basting the chicken with its juices every 15 minutes, until the skin is golden and the meat is cooked.

Pour the pan juices into a small pot, dissolve the cornstarch in a little cold water, add it and cook 2 minutes stirring until the sauce thickens.

Serve the thighs coated in orange sauce, with rice or mashed potato.
